We’re seeking an experienced Head Pastry Chef to lead our pastry kitchen, creating exceptional desserts, baked goods, and sweet treats that delight our guests. You will work closely with the Head Chef to design menus that reflect seasonal trends, modern techniques, and the highest standards of presentation and flavour.

Key Responsibilities
Prepare, bake, and present all pastry, bakery, and dessert items to the highest standard.
Collaborate with the Head Chef and kitchen team to design, update, and innovate dessert menus in line with seasonal trends.
Ensure consistent portion control, presentation, and quality in every dish.
Manage stock levels, ensuring proper storage, rotation, and usage of ingredients.
Maintain exceptional cleanliness, organisation, and food safety within the pastry section.
Support the training and development of junior pastry and kitchen team members.
Contribute to cost control, minimising waste while maintaining quality.
Ensure all allergen, COSHH, and HACCP procedures are followed.
Report any maintenance or equipment issues promptly to management.
What We’re Looking For
Proven experience as a Pastry Chef in a 5-star hotel, 2–3 Rosette, or Michelin-rated kitchen.
A strong portfolio of creative pastry, bakery, and dessert work.
In-depth knowledge of modern food trends—local, Irish, and international.
A can-do attitude, resilience, and the ability to thrive in a fast-paced, dynamic environment.
Strong organisational skills, attention to detail, and an innovative mindset.
Relevant culinary qualifications and experience in high-quality, professional kitchens.
